Hello FUTP 60 National Team! It’s time to huddle around with your families for the winter season, and we Ambassadors from New Hampshire have some delicious recipes and ideas to pass around this holiday season. Here are a few of them, and we speak from experience that they all really are a treat after getting in those 60 minutes of activities!


Hey, this is Prescott in Western New Hampshire. My recipe is Applesauce Chocolate Chip Cookies! Although they have some sugar, you don’t need all that the original recipe calls for to make this scrumptious treat. For a delicious food pairing, try these cookies with a side of milk, perfect to help meet your recommended 3 servings of dairy a day!

Applesauce Chocolate Chip Cookies

Ingredients

  • ¾ cup of applesauce
  • 2 tablespoons of canola oil
  • ½ cup of sugar (I changed to ¼ cup and the cookies were still delicious)
  • ½ of brown sugar
  • 1 teaspoon of vanilla
  • 1 tsp. of cinnamon (optional)
  • ½ teaspoon of salt
  • 2 cups of flour
  • ¼ cup instant oats
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 package of semi-sweet chocolate chips (once again, I only use ½ the package)

Preheat the oven to 350 F. Begin mixing oil, applesauce, and sugars together. Add salt, cinnamon, vanilla, flour, oats, baking soda, baking powder. Mix together until dough is smooth. Add chocolate chips, and mix them in. Scoop 2 tablespoon sized globs of dough on to a greased cookie sheet. Bake for 10-12 minutes, until the edges of the cookies are golden. Keep an eye on them, they may cook faster.


#2: Hey, this is Syd, keepin’ it real in Southern New Hampshire. My recipe is on Zucchini Fritters. This is an easy, fast recipe for anyone. People can eat it before, during, and even after dinner! I love this recipe because it’s simple, delicious, and it tastes like a chip. So if you’re not the veggie type (I’m not a fan of them sometimes) this is the food for you! You enjoy a veggie and get some of your needed vitamins and nutrients!

Baked Zucchini Fritters

Ingredients

  • 1-2 zucchinis
  • 1-2 Egg whites
  • ½ cup Breadcrumbs
  • ¼ cup Shredded Parmesan Cheese
  • ¼ cup Grated Parmesan Cheese
  • Salt
  • Pepper

Preheat the oven to 350oF. Slice or use a mandoline to diagonally cut the zucchini into thin slices. Mix the breadcrumbs, shredded parmesan cheese, grated parmesan cheese, pinch of salt, and a pinch of pepper into a bowl. Once the egg whites are whisked in a small bowl, the zucchini fritters can be assembled. Take the zucchini slice and dip it into the egg, then coat it in the bread crumbs and parmesan cheese mixture. Once all the zucchini slices are coated, place them onto a pan to be baked. After ten minutes, take a spatula and flip the slices; putting them back in for another ten minutes (20 minutes total cook time). However, depending on the person you may want it cooked longer (more crispy), or a person may want it to be done at 20 minutes (softer but baked).


#3: Hey, it’s Mitchell, also down in Southern NH! I don’t have a recipe but I have a physical activity that you can do after dinner, since you’ll probably have family around during the holidays! Just because you’re on a break doesn’t mean you don’t have to Fuel Up and play for 60 minutes. A great way to stay active is to play some FLAG Football. You can use some old shirts for flags and make teams. Just remember it’s all for fun, but maybe a little bit of competition!
