A little fact you may not know about me – I grew up on a farm in Kansas and my parents and my grandparents have been farmers their entire lives. My family breeds Black Angus cattle and grows corn, wheat and beans, so I know a thing or two about good, fresh food!

Growing up, my dad, my older brother Mike and I usually wouldn’t come in from working outside until it was dinnertime. We always worked up a BIG appetite! My mom is a great cook, but my favorite meal she would make is blackened grilled chicken with fresh corn on the cob, hot off the grill, and a homemade biscuit. I am biased, but a big glass of cold milk was a great way for me to cap off the whole meal. What I love most about this meal, besides my mom’s awesome recipe, is that my family sat down to enjoy a meal made of the things we were growing right outside our house!

Even though I’m not back home as much anymore during football season, I still crave my mom’s good cooking, especially after a tough practice. Whenever I head back to Green Bay after a trip to our family farm, my mom always sends me home with plenty of leftover chicken and fresh vegetables. I love it, and know my wife Emily does too. It’s a little taste of home, and I know it keeps me fueled up, as well!

I’m curious to know – what’s your favorite meal?

Well, my mom’s family is from the Dominican Republic and I like to eat plate loads of “arroz y gandules con pollo” which is simply rice and pigeon peas with chicken. It’s really good and super healthy. I love to wash it down with some milk! Now, my dad’s side of the family is Italian, so I enjoy eating spaghetti with chopped tomatoes and light olive oil and diced garlic. It’s really light and very tasty. I also wash it down with milk! Sometimes my mom mom makes this combination juice with oranges, strawberries, milk and ice and blends it in the blender! Really yummy!

My family is Vietnamese, so I love any type of rice! I usually love eating it with my mom’s omelets. I think they’re the best combination in the world!

My mom and my sister and I are from Thailand, so I’m used to eating rice in the moring, afternoon, and dinner. It never gets old.
