“Eating healthy is important to keeping your body well. We spend a lot of time in the outdoors and enjoy gardening and fishing. I came up with this fish taco recipe with my mom because we catch a lot of fish in our family. The recipe has Greek yogurt, whole wheat tortillas, quinoa, fish and lots of veggies. “I’m involved with my local Dairy Council through a nutrition program at my school. They recommended that I participate in this recipe challenge because I want to make a difference in my school and community. I knew I had to incorporate Dairy to make them proud, so I decided to make a list of all of my favorite foods and see what kind of recipe I could come up with. I talked with a local chef at the University in my town and he explained what the new “Super Foods” were and how important they are to our health. From there, I created a recipe that I thought would be great. I worked really hard through trial and error until I finalized my recipe that is now delicious and includes most of my favorite foods and the new super foods I have grown to like.” – Reagan, Summit Ambassador, WV
