As a State Representative from VA, I attended the Summit in Washington D.C. over the summer. I had a great time and on the final day I was asked to write a blog about my favorite food from a foreign country.

I live in Southwest VA, a place that is not close enough to Canada to have northern cuisine, but not too far south to have Mexican culture blended in with the food I eat. Being from this area I have had the blessing of trying many different foreign foods, so it was hard to choose just one! However, I finally settled on one I thought was the best for you and tasted great at the same time.

I chose a recipe called Fruit Salsa. I first heard about it from my grandmother and decided to try it. It was a very easy recipe to follow and quick to make. The minute I tried it, I loved it! Ever since then it has been my favorite foreign food, and I hope it can be yours too!

Ingredients:
1 cup of finely chopped strawberries
1 medium navel orange peeled and finely chopped
3 medium kiwi peeled and finely chopped
1 can (8oz.) unsweetened crushed pineapple, drained
1 tablespoon lemon juice
1 1/2 teaspoon sugar
Combine ingredients in a bowl and refrigerate. The salsa can be eaten by itself or it can be served with Cinnamon Chips.

Ingredients:
10 flour tortillas (8 inches)
1/4 cup of butter, melted
1/3 cup of sugar
1 teaspoon of cinnamon
Brush tortillas with melted butter then cut into each tortilla into 8 wedges. Combine sugar and cinnamon and sprinkle over the tortillas. Place on ungreased baking sheets. Bake at 350 degrees for 5-10 minutes or until crisp. Serve with the salsa and enjoy!

    I love food! So, this looks really good. And I’m always looking for healthier ways to eat. Definetly trying this recipe out!
