As an after-school snack, my mom likes to buy low fat colby-jack and low fat string cheese sticks. I also like low-fat yogurt. I’ll sometimes have these with some fresh fruit and I’m good to go until dinner. These snacks give me the protein and other nutrients I need to start my homework or run around with my little sister!

I have a healthy and easy recipe for you to “fuel up” with!

Rainbow Fruit-cup & low-fat yogurt (I made this recipe for my class and it was a hit!)

What You Need:
– strawberries
– canned mandarin oranges
– one fresh pineapple, or canned pineapple
– green grapes
– blueberries
– purple grapes (you can substitute any of the fruits for a different kind of  – – fruit with a matching color)
– low-fat vanilla yogurt
– clear cup(s)
– fork(s) or spoon(s)

Instructions:
– Layer each different fruit in rainbow order into the cup (red, orange, yellow, green, blue, purple).
– Top with low-fat vanilla yogurt.
– ENJOY!
