In the last few months, Fuel Up to Play 60, AdVenture Capital, and GENYOUth Foundation has become my life. Why? Well, it all started with my idea. I had just become a local Student Ambassador for my school and I got an e-mail saying that I was being offered the chance to win $4,000 for my school to implement a program of my choice that had to do with either healthy eating or physical activity. I wanted to do this more than anything but had a problem coming up with an idea. I thought, ‘What do I really love to do more than anything?’ That’s when it hit me, cooking! My passion is to cook. So, I took that idea and went with it. I could create healthy eating cooking classes for the students in my school! And after I came up with that, my head over-flowed with ideas. I applied for the grant and went through phone interview after phone interview, e-mail after e-mail, until I got the lucky e-mail. I was chosen as one of five lucky winners out of the COUNTRY! I was ecstatic! Then, after one of the best weekends of my life in Omaha, it was time to get to work. I planned four classes for the end of the year called “Appiteasers” and I already had about 17 kids show up! We made healthy pizzas, guacamole, kale chips, and two kinds of smoothies! We had so much fun and most of the kids said they were definitely coming back next year! So now it’s summer and it’s time to start planning for next year! Probably the most important thing I learned from this was that one idea can take you a long way.

Sunshine Smoothie
1/3 cup each of frozen strawberries, mango chunks and peach slices
1 banana
1 cup orange juice

Put all ingredients in a blender and blend well, until smooth. Pour into two glasses and enjoy!
